Wine is an ancient drink with uncountable varieties. With such a lengthy history, the culture surrounding it has also had a long time to evolve. This has produced an immense mountain of information, and makes stepping into the wine world a daunting task. What is a Chardonnay supposed to taste like? How about a Nebbiolo? 

Not every wine enthusiast has the time, energy, or finances to sign up for weeks of wine appreciation classes in order to better understand what's in their stemware. Thus, in an evening of intrigue and storytelling, we bring together two of Melbourne's finest to share their personal stories, and to demystify wine once and for all.

Matt Hansen @ Fine Wine Appreciation

Matthew Hansen trained as an apprentice chef in Melbourne and graduated from William Angliss College in 1980. It was while working as a chef at London's Dorchester Hotel in 1982 that Matthew developed a deep interest in wine and the importance of wine as part of a menu. 

Most importantly to Matthew, and those who have benefited from his unique Fine Wine Appreciation course, Matthew is Melbourne’s only completely independent educator, and not affiliated with any specific wineries, wine merchant or makers – each and every wine featured in his courses are offered on merit alone.


Clare Burder @ The Humble Tumbler

Clare has been working in the wine industry for over 14 years. She’s written about wine, made wine, taught wine appreciation, sold wine, drank a lot of wine and  in general has spent most of her career talking about wine. That might have been behind a counter at a cellar door, in a wine shop, at public tastings, on stage, hosting corporate events or at one of the wine courses  or masterclasses she’s written. 

She calls herself a wine educator but her passion – really – is to bridge the gap between consumers and wine brands. She runs The Humble Tumbler – a business dedicated to teaching consumers about wine, whisky & gin -  and Vintuition – a consultancy practice specialising in training for cellar door staff. She also helps make & sell her family’s wine labels ‘Eminence’ and 'Nimbostratus' and in 2016 her book ‘Tipsy’ won the Wine Communicators Award for best wine book. She's splits her time between Melbourne and the King Valley.

Wade Institute

Wade Institute is home to The University of Melbourne’s Master of Entrepreneurship. When you’re teaching people to create, make and innovate, the space they occupy should invite them to create new things from the moment they walk in. The Wade Institute centre will do just that.

Rather than walk into a building full of classrooms and offices, students will enter a space with a kit of parts, from walls and screens to different desk parts and lights. It was one afternoon when one of the Founders, Kym Huynh, called Angie Chong of The Humble Dumpling, just to have a conversation. It had been an intense start to 2017 and just shy of 3 months, Kym wanted to connect again with what brought him inspiration, joy and fulfilment - the people and companies that he works with.

For him that day, inspiration came in the form of Angie Chong. By some wonderful stroke of serendipity, Angie shared an inspiring excerpt from the book “The Last Chinese Chef” by Liang Wei. For Kym, the words were both beautiful and moving, and created a fundamental and tectonic shift. These words would later lay the foundation for the launch of the WeTeachMe Pop-Up School.

“Apprentices have asked me, what is the most exalted peak of cuisine? Is it the freshest ingredients, the most complex flavors? Is it the rustic, or the rare? It is none of these. The peak is neither eating nor cooking, but the giving and sharing of food. Great food should never be taken alone. What pleasure can a man take in fine cuisine unless he invites cherished friends, counts the days until the banquet, and composes an anticipatory poem for his letter of invitation?”

Angie Chong invites people into her own home to share food, so that she can pass on her heritage and knowledge. It is not only the act of sharing that is magical, but also the pleasure one can take when the bequeathed knowledge is used to leave a positive and lasting impact on cherished friends, family, and maybe - if it happens enough - our communities, and one day, the world.

And so the classes, workshops and courses, where we invite the best and most influential people in the world to present at, act as a conduit to pass on knowledge and heritage to a willing and mindfully curious audience. It’s an invitation that brings together people who believe in the the idea of sparking an eagerness to learn, so that together, we can propel a tidal wave of transformation that impacts not only on our own lives, but the lives of those who surround us, and then our communities.
