Description

Join smallgoods maker Anna Mortimer for SNAGS 101 : The Art of Sausage Making. Anna will show you how to transform a pork shoulder into the humble snag. Over the course of the workshop you’ll learn what makes a great sausage and the techniques needed to prepare these in your own home.

The workshop will cover:

- Tools of the trade

- What to ask your butcher and how to select your meat

- How to prepare and trim the meat for sausage making

- Different sausage types and textures with a tasting to identify and understand the unique sausage styles

- Grinding the meat

- Seasoning, ratios and mixing

- Casings

- How to fill, link and store your snags

The session will finish at the grill, discussing different cooking methods over a beer and homemade hotdog.

 

ABOUT ANNA MORTIMER

I love the old world traditions. Tying sausages, a glazed baked ham. Bacon fresh from the smoker and the magic of charcuterie from a little salt, meat and time. After a decade in the corporate sector I packed my bags and moved to Paris where I trained and worked as a chef.

I spent five incredible years under the guidance of passionate and celebrated mentors including Chef Bertrand Grebaut at Septime in Paris, Butcher Troy Wheeler at Meatsmith in Melbourne and Charcutier Dominique Chapolard at his farm in Gascogne, France.  My time in France has undoubtedly coloured my approach to food – Slow, simple and using the very best produce possible from local sustainable farms and pasture raised animals.

Cancellation & Refund Policy

REFUNDS

Work-Shop requires 48 hours notice in writing prior to the class for a full refund or transfer.  Refunds and transfers will not be processed if cancellation occurs within 48 hours of the event commencing. If you do miss this window, earn some extra karma points and give your ticket to one of your buddies. For cancellations prior to the 48 hour cut off, email learn@work-shop.com.au to organise a refund or transfer.

CANCELLATIONS

We’ll do our darndest to run all scheduled classes, however, let’s face it… sometimes shit happens! Most of our classes must have a minimum of 5 participants before we can put them on. In the event that a class is cancelled, students will be notified via text message or email and entitled to a full refund or credit.

Anyone partaking in any classes or coming to any events at Work-Shop or organised by Work-Shop must agree to these terms and conditions.

  •  Any damage, loss or theft incurred to personal property property brought into Work-Shop’s premises.

2.) PHOTO & VIDEO

I agree to give Work-Shop unrestricted publishing rights for any photographs or videos taken at Work-Shop classes and events or on Work-Shop’s premises. (Don’t worry, we’ll only these use to show others how much of a rad time you’re having through social media, newsletters, blogs, website and general Work-Shop promo material)
