Description

Discover the joys of wine making from scratch in this 5 session course, run over a course of 8 months, spanning the vintage season with Stefano Baggio and local wine makers. We will uncover the very start of making wine and take you through, step by step how this marvelous process occurs. We will pick fruit from a local winery, crush and destem usuing our equipment in Epping and process the juice with local wine makers for added information and support.

March 2018 Saturday 9.30am~1pm Picking, testing & crushing.

March 2018 Tuesday 6.30pm~9.00pm Therory, fermentation & pressing

April  2018 Tuesday 6.30pm~9pm  Wine racking, preservation & oaking

August 2018 Tuesday 6.30~9.00pm Therory of tannins, complimentory so2 test, finning trial, racking & filtration.

December 2018 Saturday 10.00~1pm Final racking, filtering & botteling with cap or cork.

All the science of wine making at each step will be examined closely and explored in a small group so you will have full access to your tutor. You will end your course with wine, cheese and a full BBQ with home-made sausages in crusty bread and a box of wine to take home! Looking forward to seeing you there..Salute!

What you will learn
  • Learn how to test your wine for any possible faults and repair the wine to make ready for bottling after maturation and clarification.
  • Learn to make wine from the very beginning, from picking the fruit to bottling over the course of 5 sessions over an 8 month period.
  • Learn the fundamentals of must, yeast and fermentation, Malolactic fermentation and the importance of lees.
What you will get
  • A BBQ at the end with a box of wine (12 bottles) to take home
  • You will receive intensive guidence and coaching in a hands-on masterclass, where you will make your own wine over an 8 month period.
  • Walk away with a full understanding of the wine making process from beginning to completion. Take home a box of your own wine made by you!
