Description

This hands-on workshop is for making quality homemade miso that money just can’t buy. Using only soy beans, Koji culture and sea salt we produce miso twice a year, a summer recipe and a winter recipe. Like wine, each year miso has subtle differences and over time the flavour changes. Unlike store bought miso, homemade miso has a unique texture and often produces chestnut and shitake flavours.

Workshop includes:

  • Homemade miso (you will take home about 1 kg). Containers for the miso will be provided.
  • Variety of delicious miso recipes: spicy miso paste, creamy miso dressing, miso soup balls and more

I grew up in the countryside in Japan where people share their home-grown rice and vegetables with neighbours and friends. The ladies in my town work together, often with the help of children, to make miso paste, fermented pickles and seasonal snacks and meals with ingredients picked fresh from their home gardens.

I studied at the renowned Tsuji cooking school in Osaka, returning to Chiba to work at a local Japanese-French restaurant. Then I travelled to Lyon in France to study further while working at Chateau de Bagnole as an apprentice. I start working at the one Michelin star Mona Lisa French restaurant in Tokyo for 2 years before taking a position at Le Gavroche in London for a further 2 years. I arrived in Melbourne to take up the chef de partie position at Philippe Mouchel’s Brasserie in the Crown Casino. As a fully trained chef, I often use my professional skills when cooking for my family. Improving the preparation and cooking methods makes home cooking easier and tastier. This method retains all the flavour and nutritional value of the food. My aim is to combine all my food experiences and create my own practical style to use at home everyday.

Cancellations and Transfer

  • All classes are an intimate size of 5 to 8 therefore we cannot offer refunds if you are unable to attend.
  • 14 Days notice is required if you wish to transfer to another class or to keep your funds in credit for another time.
  • You are welcome to offer your place to a friend if you can not attend.
  • Gift vouchers are non-refundable.
  • Chat Potato reserves the right cancel or reschedule a class for operational reasons. If a class is cancelled due to low attendance (a minimum of 5-8 participants is required to run a scheduled class), sickness or any other matter relating to Chat Potato, all participants will be notified as soon as possible and no later then 48 hours before the class commencement date, and the option to reschedule for another date or full refunds provided.

Chat Potato reserves the right to alter or cancel a course without notice, including menus and dates & times.

Bookings and payments

  • Before you make your booking please be aware that due to our intimate class size of 5-8 participants all paid bookings are NON-REFUNDABLE.
  • Payment is to be made in full to secure a place in one of our cooking classes. You will not be confirmed unless full payment has been made.
  • We do not take tentative bookings.
  • Chat Potato will accept payments thought the website using PayPal. All major credit card payments are also available using PayPal.
  • When participating in a Chat Potato event, where the participant will be around or using sharp and potentially dangerous tools suitable to a kitchen environment, the participant releases, indemnifies and excludes Chat Potato and its employees from any and all liability of any kind for any damage or injury incurred while attending or visiting Chat Potato. The participant understands these terms and conditions and accepts the inherent risks of a kitchen environment when they make a full payment for a scheduled event.

Attending a class

We kindly ask that you arrive 10 mins before (but not more than 20 mins before) the class starting time to maximise lesson time.

Dietary Requirements and Menu

  • Chat Potato does not cater for individual dietary requirements beyond what is denoted in the class description. Chat Potato is unable to provide alternative or substitute ingredients for participants with special dietary requirements.
  • The menus on the website could be subject to change without notice due to seasonal variance.

Parking

Street parking is available near our venue.

Other rules

  • Any person who is intoxicated will not be allowed to participate in the class.
  • The participant will be responsible for any damages to or loss of Chat Potato’s property during the class as a result of inappropriate conduct.
  • Chat Potato will take all necessary care, however we are not responsible for the loss and damage of personal items.
