DUST is a bakery, pizzeria and mill in the Tramsheds, Glebe.
Open daily for breakfast, lunch and dinner, every menu item has bread at its core. DUST will serve a selection of fresh made schichiatta from the wood oven, stone ground, slow fermented wood fired pizzas, plus cakes, pastries, and of course a unique selection of breads.
An integral part of DUST is the on-site stone mill. One of the first in Sydney, the mill has been handmade in Austria with the bakery in mind. Owner Cesare and his team will grind any flour used themselves on site.
DUST will re-position bread at the rightful heart of our tables, meals, families and lives, and re-define the perception of flour.
The class was very informative and enjoyable. We gained a new understanding of what has happened to bread over the years and how we can move back to a more nutritious alternative. It was also good value - knowledge, a loaf of delicious bread, 1kg of healthy flour and a wonderful dinner. A great night.
Cesare's passion and enthusiasm, was highly infectious and the group was engrossed from the first moment. The class was extremely informative and interesting. Rather disconcerting how they have now make bread, and the ingredients included which are of no nutritional value or purpose, except to make things in bulk and make money for the manufacturers. Highly recommend this class if you are looking for a healthier alternative and to understand the value in Artisan products and lifestyle.
