Description

DUST is a bakery, pizzeria and mill in the Tramsheds, Glebe.

Open daily for breakfast, lunch and dinner, every menu item has bread at its core. DUST will serve a selection of fresh made schichiatta from the wood oven, stone ground, slow fermented wood fired pizzas, plus cakes, pastries, and of course a unique selection of breads.

An integral part of DUST is the on-site stone mill. One of the first in Sydney, the mill has been handmade in Austria with the bakery in mind. Owner Cesare and his team will grind any flour used themselves on site.

DUST will re-position bread at the rightful heart of our tables, meals, families and lives, and re-define the perception of flour.

This was my first GrAiNZ conference. It was brilliant! The program was full, but varied enough to cover many areas of baking. It was good to see discussions on milling, as well as practical sessions on developingcausing and baking a range of different doughs and bread. Being a gluten free baker I was encouraged by the generous welcome to engage and participate. It was also good to see a demonstration of gluten free flat bread by Nonie.

Learnt so much about wheat. How it was and why it is how it is now-broken. And how there is a movement to redeem it. Soo interesting. Great teacher in Cesare. We had a wonderful meal with great people and sooo much incredibly tasty bread and pizza! Even the salads were lovely and much appreciated. Thanks for a fun night.
