Description

This 2 day course builds on the concepts and skills introduced in the Foundation course, and provides more detailed knowledge and skills for using common brewing devices.  It is ideal for someone who has brewing experience and wants to explore how to improve coffee quality.  This course covers a wide range of topics, including:

  • The essential elements of brewing and their individual influence on brewed coffee;
  • Measuring brew strength and calculating extraction;
  • The sensory analysis of brewed coffee (aroma, body, taste, and flavour)
  • Adjustments to consider in order to deliver a delicious, well balanced brewed coffee.

What you will learn via theory & practical activities:

  • The various factors that influence low, high, and uneven extraction, and how to control them;
  • How to taste and identify the difference between balanced, under, and over extracted brews;
  • How to choose a grinder that is suitable for brewing coffee;
  • The influence of roast level on brewed coffee;
  • What happens during the brewing processes;
  • How to correctly measure strength (solubles concentration) and calculate average extraction (solubles yield);
  • How grind setting, particle size distribution, brewing time, temperature and turbulence affect brewed coffee;
  • How water chemistry impacts brewed coffee;

Students who successfully complete the practical exam during the course must then successfully complete an online exam after the course to receive the internationally recognised SCA Brewing Intermediate certification.  SCA Brewing Intermediate certification earns credit towards the SCA Cafe Diploma.

Awesome class, I learned a lot of knowledges from Simon. Combined theory and practical studies are easy for understanding.

You are entitled to a full refund.

If you can't attend the class:

You’re welcome to send someone in your place.

  • A refund can be requested 14 days before class starts. An admin fee of AU$20.00 applies.
  • A transfer can be requested anytime before the class starts. Free of charge.

No changes will be allowed after these times.
