Mi Cocina Mexico

Mexican food is the new black, we are not talking Tex-Mex here we are talking the real Mexican! Ancho chillies, black beans, masa harina and traditional Mole Poblano.On the menu we start with Potato & Chorizo tacquitos with pico de gallo and a tomatillo dressing,  making our own corn tortillas and follow this with Chicken Mole Poblano with green rice, Mexican Corn bread, elotes callejeros – corn on the cob with chipolte mayonnaise and a Ceviche with avocado, pomegranate and lime. All this is then followed by a very traditional Mexican chocolate and cinnamon flan and agua de jamaica – hibiscus tea.

Mi Cocina Mexico is a gluten free class and an be adapted for fructose free students.

This is not a demonstration class so be prepared to slice, dice, chop, stir, taste, feel and flavour this beautiful cuisine.  Every studuent helps to prepare all the dishes that go together ot make a feast from Mexico.  

On sale at our venue you will e able to buy all the ingredients that we use in the class.

Once I completed my formal qualifications in England, I knew this was my ticket to the world. I spent two years backpacking and this opened my eyes to tastes and techniques which fired my imagination.

Honing my skills in fine dining restaurants after relocating to Australia from the UK, my urge to travel had not been extinguished, South East Asia beckoned, followed by 5 years in the Mediterranean as a chef on a luxury super yacht.

I ran a very successful cooking school from a  Chinese Junk in Docklands where my aim has always been getting back to basics with fresh ingredients and being able to coax my students to exceed their expectations. Of course the main ingredient in all my classes is fun!

I have found a fantastic venue in Piper Street a very foodie area of Kyneton and am creating a unique learning and entertaining venue for the food lovers of Melbourne so come up and see us soon.

Lovely small class that used familiar ingredients! A great teacher and a great space to learn. We really got our hands on and practiced techniques. Will definitely return for another class. Thank you!
