Royal Thai Banquet
Thai cuisine places emphasis on fresh and fragrant ingredients with strong aromatic components and is known for being spicy.
Dishes include Thai fish cakes with red nam jam, Jungle curry of chicken with snake beans and mandarin (Coxy’s favourite), Thai Green curry of Beef and a whole snapper baked with lime and chilli. We also make the famous Asian roti bread and finish the Thai indulgence with black sticky rice with coconut cream and caramelised fresh coconut.
Balance, detail and variety are important to Thai cooking and is known for its balance of the four fundamental taste senses in each dish: hot, sour, sweet, salty.
We start off reveiwing the ingredients we will be using, some you will know and some you may not know. All classes are hands-on, so you will be preparing the food, not just watching a demonstration. We limit the size of the group to ensure personal attention to all participants. Each dish is made by everyone so you get to see the dish from start to finish.
Everything is created from the fresh ingredients and curry pastes and sauces are all made on the day. No pre-made dishes here.
This class is gluten free except for the roti bread.

I ran a very successful cooking school from a Chinese Junk in Docklands where my aim has always been getting back to basics with fresh ingredients and being able to coax my students to exceed their expectations. Of course the main ingredient in all my classes is fun!
I have found a fantastic venue in Piper Street a very foodie area of Kyneton and am creating a unique learning and entertaining venue for the food lovers of Melbourne so come up and see us soon.
