Good Morning Vietnam!
Vietnamese food is one of the most varied and seductive on the planet, a delicious mix of the food of its colonial visitors and age-old flavours and techniques.
Vietnamese dishes are fresh, have a depth of flavour and seem to have amazing health properties at the same time. All made with fresh herbs and spices, you’ll taste the difference.
Whilst enjoying a cup of tea or coffee we begin by discussing some of the ingredients we will be using throughout the day. Some are obvious, some not so. Then grab an apron and we start witht the preparation in which everybody gets to take part in. This is not a demonstration class and all the students get to make each dish together so you see the dishes created from start to finish. Small groups ensure that everyone partiicpates
We start with rice paper rolls filled with a Vietnamese pork and prawn sausage. We then move onto sugar cane prawns, pork braised in young coconut water and chilli and lemongrass curry served with coconut and ginger jasmine rice and followed by a traditional Asian dessert of sticky rice with bananas steamed in banana leaves.
Good Morning Vietnam is a gluten free class. We can also adapt for fructose free students if notified at the time of booking.

Once I completed my formal qualifications in England, I knew this was my ticket to the world. I spent two years backpacking and this opened my eyes to tastes and techniques which fired my imagination.
Honing my skills in fine dining restaurants after relocating to Australia from the UK, my urge to travel had not been extinguished, South East Asia beckoned, followed by 5 years in the Mediterranean as a chef on a luxury super yacht.
I ran a very successful cooking school from a Chinese Junk in Docklands where my aim has always been getting back to basics with fresh ingredients and being able to coax my students to exceed their expectations. Of course the main ingredient in all my classes is fun!
I have found a fantastic venue in Piper Street a very foodie area of Kyneton and am creating a unique learning and entertaining venue for the food lovers of Melbourne so come up and see us soon.
