Description

Olives straight from a tree are inedibly bitter and must be cured and then pickled somehow to make them edible. In this workshop we will cover several different techniques to cure olives, each with a different waiting - or curing - period. In order to fully experience the stages of the processes, some olives will have been partially cured before the class for you to continue the process; as well as taking home fresh olives for you to start from scratch. Tastings will be available so you can decide which style is your preferred. We will use both black and green olives. If you grow olives, bring along some samples so that we can suggest some ways to cure them.

My Green Garden is very pleased to collaborate with Massaros Winery in the Yarra Valley (Kangaroo Ground) in bringing you this workshop. It will be hosted at the winery in their outdoor (heated) room. We will pick olives from the trees in their extensive olive grove before settling in to do the curing techniques, so please ensure that you are wearing appropriate clothing and footwear for the season.

We will start promptly at 9.30am and the workshop should be finished by 12noon. You are invited to linger a while at the lovely winery's restaurant and enjoy a relaxing lunch (at your own cost).

  • Apron with a bib and pocket if possible

My Green Garden provides a local and experienced resource for talks, demonstrations and workshops on many aspects of sustainable gardening practices, especially in the area of growing food.

Presentations are to both children and adults, through schools, libraries, Probus and other community groups, neighbourhood houses, garden clubs, shopping centres, council-funded information sessions and holiday programs.  Maria of My Green Garden is also a regular presenter for Bulleen Art & Garden and for the not-for-profit organisation Sustainable Gardening Australia (SGA).

My Green Garden also runs classes and workshops from Maria's home and garden in Donvale, in suburban Melbourne.

Maria was very organized, and the had clearly put considerable effort into preparation of equipment and produce for us to work with. We all enjoyed the many and varied styles of olives for us to prepare and take home. the locations excellent, and we had the chance to pick our own olives from their grove, which was also unexpected.

Excellent hands-on learning experience in a small group with Maria - our friendly, knowledgable and organised instructor. Picking olives at the start of our class, progressing through several preserving techniques & finally getting to taking home batches of olives in various stages of preparation - was an ideal way to learn. The venue at Massaros Winery was great - easily found and plenty of parking available. Good value class in terms of cost and time spent.

I attended the class with my husband Jim. We both enjoyed the class and came away confident that we can now preserve our own olives. Maria was a fantastic instructor. She was very passionate and knowledgeable about olives. The class was quite small, only 8 or 9 people. We picked the olives, instructed in several different methods of preserving, and tasted the finished product, so it was fairly fast paced, yet still fun and relaxing. The venue was fantastic and coffee and warm biscotti straight from the oven an added bonus. We would thoroughly recommend this workshop.
