Olive Magic - Preserving Olives



Description

Olives straight from a tree are inedibly bitter and must be cured and then pickled somehow to make them edible. In this workshop we will cover several different techniques to cure olives, each with a different waiting - or curing - period. In order to fully experience the stages of the processes, some olives will have been partially cured before the class for you to continue the process; as well as taking home fresh olives for you to start from scratch. Tastings will be available so you can decide which style is your preferred. We will be using mainly green olives. If you grow olives, bring along some samples so that we can suggest some ways to cure them. You will end up with several jars of olives, some ready to eat, others to continue the process at home.

We will start promptly at 9.30am and the workshop should be finished by 12.30pm. 

BOOKING CONDITIONS Bookings are considered final once payment is made. If you need to cancel, at least 7 days notice is required in order for a refund, less a 10% administration fee. For any cancellations made within 7 days of the workshop date, you will forfeit your fee unless the place can be filled from a waiting list (you willl be refunded less the 10% admin fee). If you would like to transfer to another workshop, it must be done with at least 7 days notice before the start of the workshop.

I had a wonderful morning learning of different ways to preserve olives. I’ve since bought some more and done another batch of Mrs Louca’s recipe, so my family are looking forward to the end results. Maria’s teaching is clear, well paced and very hands on. I hope I’ll have other opportunities to learn more skills from her. Thank you Maria for opening my eyes to the variety of ways to prepare olives.

The inviting environment and hospitality set the tone for a great class. It was clear, organised, well structured and 100% (clean) hands on. Notes are easily understood and follow the structure of the class and Maria's broad and deep knowledge was revealed as she answered every question with expert and precise information.

Maria was very organized, and the had clearly put considerable effort into preparation of equipment and produce for us to work with. We all enjoyed the many and varied styles of olives for us to prepare and take home. the locations excellent, and we had the chance to pick our own olives from their grove, which was also unexpected.
