Spicers Tamarind Retreat

Vendor since 2015

Spicers Retreats started with the idea of sharing a little known area of Queensland’s spectacular high country, thinking if New Zealand can have great lodges why can’t we?

Beginning with Spicers Peak Lodge in the mountains of the Great Dividing Range, guests can now choose from eight very individual retreats covering southeast Queensland and the northeast of New South Wales.

We genuinely believe that while people come for the luxury what they really gain is the rejuvenation that comes with getting in touch with the natural surroundings.

We call it ‘relaxed luxury’, a feeling of being totally at home and free to be yourself. It’s not solely about a comfortable bed, quality furnishings, personalised service and great food, it’s just as much about the feeling of being renewed and reinvigorated by the land itself.

We think what we have achieved is a true blend of luxury and an authentic Australian style of hospitality. There’s nothing better for us than to be at one of our retreats and see it being used the way we imagined, so please take some time to enjoy the unique, inspiring spaces we’ve created.

02 March 2018 • Thai Summer Menu - Cooking Class

Hi, I completed the summer Asian cooking class. Although the cooking school was lovely, great food and in a nice location, I was quite dissappointed by the lack of cooking skill that was taught. We really just followed a recipe and put in the ingredients that were handed out step by step. There really was very minimal discussion about Asian cooking technique or flavours. The cook leading the class was following the recipe step by step as well and even claimed to have forgotten what was next as she had only done the Italian class the day before. For a restaurant that holds 2 chef hats for their Asian cooking I would have liked a bit more explanation into spice flavours, how they enhance the dish and the best techniques to make the food enhanced. I walked away from the class knowing how to follow the recipes we completed, but certainly have no further knowledge on Asian cooking.

Very friendly and approachable teacher. Though public speaking wasn't her strength. Certainly didn't entertain through her presentation. She looked too busy with trying to answer questions, light cook tops, top up ingredients, cook food etc etc. it Seems like there really should be an assistant. Too much standing for long period and too much food at the end. Perhaps an idea could be to stop half way for short break and eat the entree and then keep going? Some music in back ground would be pleasant also :)
