Processing of a small pig carcass and uses of all the elements to produce sausages , roasts , salamis, prosciutto was demonstrated in between 3 courses . The antipasto plate was good, the main meal excellent but dessert was disappointing .
Excellent course help to demystify charcuterie. Gave me the confidence to try it for myself.
Excellent night out. Brilliant way to add that bit extra to a great dinner. The chef was great fun and very informative. Well worth doing.
