What could be nicer than spending an afternoon in The Sauce Kitchen baking amazing pastries?
Award winning chef Kylie Simpson creates amazing patisserie for the Alfred and Constance restaurant and cafe complex in Fortitude Valley in Brisbane. She is an extraordinary baker who has an affinity with all things pastry, plus she can adapt recipes and ideas for when you need to be gluten free.
As always her classes are full of tips and hints. She is incredibly generous with her knowledge and you will test recipes you will use again and again.
In this class you will learn to make sweet and flakey pastry from scratch, then once you have mastered it, you will make some different tarts with contrasting styles and flavours. Kylie will show you how to adapt and vary the recipes in different ways
Kylie will lead you through:
Chocolate sweet pastry
Chocolate ganache and salted caramel ganache
Frangipane and an almond and sour cherry tart.
Come along on your own and make some new friends, or make a group get-together. Our classes are great fun in a friendly atmosphere in our beautiful historic building.

The staff of Sauce are a very cheerful bunch who will always, with a smile, assist in any way possible. To me they are a great crew who appear to love their job and work hard at bettering the business.
The class was exactly as expected/described. I thoroughly enjoyed learning how to make short crust pastry, including sweet pastry. Kylie Simpson is an excellent instructor who explains, in detail, how and why each process is achieved. Although the fillings were not part of the class, Kylie explained the processes thoroughly and gave us tips and tricks to achieving a perfect result.
I thought the class was exactly as set out in description, was conducted professionally and very well organised. I learnt a lot. I would go to other classes with this chef. Many thanks
