Description

This 2 day course is suitable for those who want to pursue a career where sensory skills are integral in the quality evaluation of coffee (e.g. coffee roastery or green coffee trader).

It is assumed that the student has some experience in coffee cupping, or they have completed the SCA Sensory Skills Foundation course.

You will learn critical knowledge and skills for cupping including:

  • How human physiology is used to smell and taste.
  • How sensory perception is impacted by psychology.
  • How to discriminate between various levels of acidity and bitterness in solution.
  • How to identify and categorise key aromas in coffee.
  • How to identify common mouthfeel sensations.
  • How the coffee value chain impacts coffee flavour.
  • Understanding the 3 main sensory test types - Difference, Descriptive, and Affective.
  • How to use Triangulation, In/Out, Difference From Control, and the CVA Cupping Protocol.
  • How to use the SCA CVA cupping forms.

You will also learn knowledge and skills essential for quality control systems, including:

  • Statistical analysis.
  • Setting up a Sensory Panel.
  • Screening Tasters.
  • Green Coffee quality control.

Students who successfully complete the practical exam on day 2 of the course must then successfully complete an online exam after the course to receive the internationally recognised SCA Sensory Skills Intermediate certification.  SCA Sensory Skills Intermediate certification earns credit towards the SCA Roastery Diploma and the SCA Coffee Trade Diploma.

I've learned a lot from this course, in fact more than what I expected. My tutor Simon James was exceptionally helpful and knowledgeable, and was always on hand to offer guidance and practical assistance if needed. He's a good counselor and I greatly appreciated our correspondence. This course is a great help for people who want to improve their knowlegde about coffee, as well as being able to apply the theory of Sensory Analysis to their workplace. I highly recommended!

You’re welcome to send someone in your place.

  • A refund can be requested 14 days before class starts. An admin fee of AU$20.00 applies.
