Description

This course aims to teach you to be a sensory skills leader in a coffee business and brings your tasting skills to the professional level.

Note:  SCA Sensory Skills Intermediate certification is a mandatory prerequisite for this course.

What you will learn:

  • How physiology, and the chain of sensory perception are used in sensory assessment.
  • How the SCA Flavour Wheel and the WCR Sensory Lexicon are used as tools in sensory assessment
  • The gustatory attributes of coffee, and how to rank their intensity.
  • Understanding and describing different types of mouthfeel.
  • How to distinguish quality differences in the flavour attributes of coffee.
  • How to identify common processing, storage, roasting, and brewing defects in brewed coffee.
  • The basics of descriptive profiling, data analysis, and interpreting test results.
  • How to set-up facilities, and manage sensory assessment in a business.
  • How to train & calibrate a sensory team.
  • Psychologically based biases, and how to mitigate them.
  • How to design tests for quality control, new product development, and shelf life.
  • Application of the SCA Coffee Value Assessment (CVA) protocol.

Students who successfully complete the practical exam during the course must then successfully complete an online exam after the course to receive the internationally recognised SCA Sensory Skills Professional certification.  SCA Sensory Skills Professional certification earns credit towards the SCA Roastery Diploma and the SCA Coffee Trade Diploma.

If the organiser cancels the class:

You are entitled to a full refund.

If you can't attend the class:

You’re welcome to send someone in your place.

  • A refund can be requested 14 days before class starts. An admin fee of AU$20.00 applies.
  • A transfer can be requested anytime before the class starts. Free of charge.

No changes will be allowed after these times.
