The CGU Gelato Level 2 Intermediate course is designed for those who have completed Level 1 or have foundational gelato-making experience and want to elevate quality, expand their product range, and personalize recipes. Delivered in Melbourne by William Angliss Institute in collaboration with Majors Group Australasia and Carpigiani Gelato University (Italy), this hands-on course deepens technical understanding and practical skills.

You will study ingredient functionality and how each component impacts texture, stability, and flavor. Learn to recognize and correct defects, and produce cream and fruit gelato, allergen-friendly options (e.g., soy or almond bases), yoghurt and frozen yoghurt, sorbetto, infusions, syrups, poached fruit, toppings, and sauces. Youโ€™ll also learn how to strategically plan a profitable, complementary product mix for your gelato business.

Course Topics

  • In-depth analysis of raw materials; functional roles of sugars, fats, and solids; defect recognition and correction.
  • Balancing methods for cream and fruit gelato, using compensating ingredients and ingredient replacement techniques.
  • Allergen-friendly gelato and options for food intolerances (e.g., soy/almond drinks, lactose considerations).
  • Yoghurt and frozen yoghurt; fruit and cream sorbetto; granita and cremolata.
  • Infusions, sugar syrups, poached fruit, toppings, and sauces; international gelato flavours.
  • Product strategy: designing a well-rounded offer and complementary products for retail success.

Prerequisites & Who Should Attend

  • Graduates of CGU Gelato Level 1.
  • Entrepreneurs and operators with basic gelato production knowledge seeking to advance quality and range.

  • Weekend: Enter via Angliss Restaurant foyer, 550 Little Lonsdale St (staff will escort you).
  • Coffee courses: Coffee Academy entrance โ€“ Ground Floor, Building D, 555 La Trobe St.
  • Train: Short walk from Flagstaff and Southern Cross stations (note: Flagstaff is closed on weekends).
  • Tram: Free City Circle stops outside Building A, 555 La Trobe St; routes include 24 (Stop 119 Spencer St/La Trobe St) and 30.
  • Parking: No onsite parking. Metered street parking nearby; off-street options include Wilsons (Spencer & Lonsdale), Melbourne Care Park (Little Lonsdale & Merriman), and Melbourne Ace Parking (612 Lonsdale St).

Participants are requested to wear flat, enclosed, rubber soled shoes for comfort and safety in the kitchens. To ensure food safety procedures are followed, long hair should be tied back and all unnecessary jewellery removed.
