William Angliss Institute, in collaboration with Carpigiani Gelato University Italy and Majors Group, proudly presents the Level 3 Advanced Gelato Course in Australia. This course is essential for gelato professionals aiming to differentiate their product offerings and develop unique recipes that meet market demands.
Participants will deepen their knowledge of balancing techniques and raw materials, learning advanced formulations including dairy-free, sugar-free, savory, and alcoholic gelatos. The course includes hands-on sessions to practice producing complex recipes and artisanal toppings and sauces tailored for negative temperatures.
Prerequisites
- Completion of Basic (Level 1) and Intermediate (Level 2) Gelato Courses is required.
- Participants should have prior experience with balancing and gelato production.

- Toppings, sauces, pralines and fillings for negative temperatures
