ABOUT VALERIE PEARSON

Valerie has been a home cheesemaker and rampant foodie for 25 years and has a passion for fresh, organic, homemade foods. Valerie’s daughter Angie was born with chemical sensitivity in 1988 and this changed their lives forever. After struggling with food labelling laws, Valerie armed herself with the knowledge and skills needed to take back control of her family’s diet! Valerie became a well informed and conscious home cook and cheese connoisseur and delved into the science behind fermented foods. Valerie published her first book, Home Cheese Making in Australia, in 2016 and is currently working on her second book, Sugar Free Home Preserving.

The good: - Valerie's unapologetic use of scientific terminology to explain the cheese making process. This was a great surprise and very welcome. It wasn't dumbed down, instead the processes were explained with chemistry and science. It would, as she noted, be a brilliant way to get kids enthusiastic about atomic interactions. - The very detailed knowledge and explanation of the various processes the dairy industry use on milk and the effects each has on the milk. These explanations were not kept specific to cheese making which was very interesting for greater gut health. - Last but not least, the method by which the cheese and yoghurt making process was explained. Summarising the process and then explaining the deviations to each step to make different cheeses was motivating to try it all out. The bad: - The seating at the workshop. It was so uncomfortable half the attendees had to get up and move to the wooden benches beside the seats. For $65 a ticket I did expect a little more comfort and to not be crammed in like school children on broken uncomfortable seats. The venue seems a little hipster which equates to uncomfortable and cheap in the real world. - We were sort of expecting to try a few different cheeses made from the beginner packs available at the workshop. There were a couple of yoghurts to try and the one cheese made during the workshop, but a few more samples would have gone a long way for interest sake. There were a lot of interesting deviations to the process to arrive at different cheeses there and I was really curious to try the differences if they were made from the same cultures and were fresh. If asked if I would recommend to a friend I would tell them - Expensive for what it is and where it is and instead pay a little more and go to a proper cheese making course by Valerie.

This workshop was more than I expected. We were warmly welcomed by the crew with a glass of wine and delicious cheese. Val is a very enthusiastic teacher/presenter with so much knowledge and humour, it was such a delight attending, learning and tasting the different cheeses, I thoroughly recommend this workshop.
