Irasshaimase! Immerse yourself in the intricate, beautiful world of traditional Japanese sake in this 3-hour workshop. Sake is fermented rice wine, but the process of fermentation is actually more similar to beer than wine - starches are converted to sugars, which then ferment into alcohol. After fermenting rice and koji, a fungus, you are left with doburoku, an unfiltered, unpasteurised sake, teeming with probiotics, amino acids and Vitamin B. Historically, doburoku has played an essential role in Japanese households, acting as an energy drink to revitalise farmers during their long days toiling in the fields.

A by-product of the fermentation process is koji acid, which suppresses the production of melanin and can brighten the skin. It also possesses anti-ageing and anti-inflammatory properties. Finally, we’re left with sake kasu, or lees, a sediment rich in live cultures. It has a low alcohol percentage, making it perfect to add umami flavour while cooking. It can also be applied directly to the skin as a face pack. This class covers a simple, hands-on process for making your own traditional sake at home, with all ingredients and supplies provided. Teacher:
Yuka Discobeans hails from Osaka, where she opened the first Disco Beans Cafe and Gallery. Relocating to Melbourne, she opened another Disco Beans 8000km south, which quickly became a cultural institution. Yuka specialises in creating quick and nourishing gluten-free and vegan dishes. She runs an educational program for teens, creating their own character bento boxes. Yuka combines traditional Japanese tea ceremonies, recipes and practices with contemporary ideas and methods in a style all her own.

Cancellation & Refund Policy

REFUNDS

Work-Shop requires 48 hours notice in writing prior to the class for a full refund or transfer.  Refunds and transfers will not be processed if cancellation occurs within 48 hours of the event commencing. If you do miss this window, earn some extra karma points and give your ticket to one of your buddies. For cancellations prior to the 48 hour cut off, email learn@work-shop.com.au to organise a refund or transfer.

CANCELLATIONS

We’ll do our darndest to run all scheduled classes, however, let’s face it… sometimes shit happens! Most of our classes must have a minimum of 5 participants before we can put them on. In the event that a class is cancelled, students will be notified via text message or email and entitled to a full refund or credit.

Anyone partaking in any classes or coming to any events at Work-Shop or organised by Work-Shop must agree to these terms and conditions.

2.) PHOTO & VIDEO

I agree to give Work-Shop unrestricted publishing rights for any photographs or videos taken at Work-Shop classes and events or on Work-Shop’s premises. (Don’t worry, we’ll only these use to show others how much of a rad time you’re having through social media, newsletters, blogs, website and general Work-Shop promo material)

We loved Yuka’s Class - she is so passionate and knowledgeable about sake making. We really enjoyed learning about the many uses for sake lees and being able to taste various foods and stages of sake. Thanks Yuka! You’re amazing!

So much fun! Yuka-san was a great host and very giving. If you love sake then this course is for you. Was a short class with plenty of sake been passed around.
