Maurice Gonella makes wonderful cheese! In our cheese course, Maurice will show you how to make beautiful fresh curds, mozzarella, feta and halloumi over the course of up to 2.5 hours. We will delve into the artisan world of cheese cultures and setting techniques, after finishing with a glorious spread showcasing different cheeses with crusty bread and a glass of wine! 

We will also learn how to age and surface ripen pressed and salted curds and look at molds and their effects on cheese. We will make a Camembert and blue cheese using ancient methods and talk in depth about storage and the best place to age cheese. We will discuss the ins and outs of creating your own chamber for perfect results at home! And of course we will eat cheese and drink wine in true artisan style.
