Always wanted to master the art of filled pasta? Join us for a fun day of pasta making with Piera and That’s Amore Cheese where you will learn how to make Balanzoni, a traditional filled pasta from Bologna and Ravioli di pesce! There's nothing like freshly made pasta!
In this hands-on class, you will learn how to make the dough from scratch and shape the pasta - all the skills you need to make your filled pasta at home.
This class is for beginners, with no pasta skills required and we will supply you with all the equipment needed.
Together with Piera you will be making:
- Balanzoni: large green tortellini-like pasta filled with ricotta, mortadella & parmesan cheese. Traditionally from Bologna.
- Ravioli di pesce: half- moon shaped pasta filled with mascarpone, crab meat, snapper, thyme & lemon.
On completion of the class, you will also enjoy the pasta you've made during the class and a glass of wine!

He became a cheese maker for the love of creating almost an unlimited number of products from just one ingredient, milk. The ancient art of cheese making involves patience dedication and love.
Our artisanal cheese is handmade following only traditional Italian recipes, using milk sourced locally from Victorian farmers. To produce the best quality Italian style cheese – free from artificial colours or preservatives, it’s essential to use the best quality local milk.
Giorgio Linguanti – Maestro of Mozzarella
In 2004 Giorgio Linguanti arrived on the shores of Port Phillip Bay with a limited English vocabulary. When he first migrated to Melbourne he commenced employment in a cheese factory where his interest and passion for making cheese ignited.
After this experience, in 2008 Giorgio started his own business ‘That’s Amore Cheese’, initially producing just one product – Bocconcini leaf. He would singlehandedly manufacture the product, sell it and then hit the road to deliver it to his customers. The product was an instant success, paving the way for Giorgio to begin making other products.
Giorgio’s business grew rapidly and in April 2015, That’s Amore Cheese moved into a larger facility in Thomastown, also accommodating a beautiful retail outlet.
Thanks to his talent and skills, Giorgio Linguanti (That’s Amore Cheese) has become Australia’s ‘Maestro of Mozzarella’.
Learning the Magic
Cheese making: it’s our passion, and we want to share it with everyone. That’s why at That’s Amore Cheese we have an educational program that includes cheese making classes, live demonstrations and product development.
Our aim is to educate the community on Italian artisan style cheese, showing our traditional techniques and recipes. We demonstrate the tools and techniques you need to be successful through the hand cheese making production process.
At our cheese making classes we help the participant discover just how fun it is to produce delicious, fresh, handmade cheese products at home. You’ll never forget the moment you first taste a slice of cheese you’ve created with your own hands and enjoy sharing it with family and friends.
At That’s Amore Cheese we continue researching and developing new products and experimenting with new flavours, to ensure we continuously offer our customers something different and exciting.

About Piera:
Piera Pagnoni arrived in Australia with her husband in 2010 on Saint Valentine’s day. After a few months of caretaking for her daughter, she realised that her love for making pasta was undeniable. This started her “Sfoglina” journey, where she gained years of experience around many restaurants in Melbourne, making fresh pasta daily. She is now one of the most well-known pasta makers in Melbourne and her dream of starting her own pasta business has finally come true.
In February 2024, Piera Pasta Fresca will be celebrating 3 years of her own brand.

If the organiser cancels the class:
You are entitled to a full refund.
If you can't attend the class:
You’re welcome to send someone in your place.
OR
- A refund can be requested 3 days before class starts. An admin fee of AU$10.00 applies.
- A transfer can be requested 3 days before the class starts. Free of charge.
- A credit note can be requested 3 days before the class starts. Free of charge.
No changes will be allowed after these times.

Anyone partaking in any classes or coming to any events at That's Amore Cheese or organised by That's Amore Cheese must agree to these terms and conditions.
1.) LIABILITY WAIVER
I agree to take on full responsibility for any damages, injuries and for physical and/or personal property, which I might incur whilst participating in classes and/or events organised by That's Amore Cheese.
2.) PHOTO & VIDEO
I agree to give That's Amore Cheese unrestricted publishing rights for any photographs or videos taken at That's Amore Cheese classes and events or on That's Amore Cheese's premises. (For use of That's Amore Cheese marketing materials).
3.) REFUNDS
That's Amore Cheese requires 72 hours notice in writing prior to the class for a full refund or transfer.
4.) CANCELLATIONS
In the event that a class is cancelled, students will be notified via text message or email and entitled to a full refund or credit.
Attendees must be 18 years or age or older.
