Fermented foods are having a resurgence in popularity due to their benefits for our gut health. 

This natural preservation process of fermentation adds good bacteria to our gut flora and the health benefits are immense. 

You will learn to make four ferments – Sauerkraut, Kimchi, Kvass and a Ginger Bug. 

If you have eaten soggy, tasteless sauerkraut out of a tin you are probably not a huge fan, but did you know it is extremely good for you? 

Handcrafted sauerkraut is absolutely delicious! Fantastically crisp with the subtle taste of the ocean, it is simple to make and very addictive. 

Kimchi is a tasty Korean vegetable condiment that utilises chilli, garlic and ginger. It too is super tasty and very addictive. We will also make a Kimchi tonic. 

Kvass is a fermented drink that can be used as a health tonic or drank like a kombucha with huge health benefits. Detoxifying the blood and cleansing the liver while adding nutrients to your body that will increase your stamina & aid anaemia. 

Ginger Bugs are a living SKOBY that is full of good bacteria boosting probiotics. Your bug can live a lifetime if cared for properly & will give you the ability to make healthy Ginger Beer for years to come.

The VRI is a project of Traralgon Neighbourhood Learning House Inc in partnership with Reactivate Latrobe Valley Ltd. 

We offer a range of classes, workshops and activities including a growing community garden, artist community gallery - Alt_Art and technical support Fridays - LV Digital Shed. A work for the dole program runs Monday - Friday at the hall and volunteers are welcome to join us in making, sharing and connecting through art, gardening, building, cleaning, cooking and using technology. Refund & Cancellation Policy

Our tutors and teachers purchase materials and prepare based on your booking. So please check your calendar before you make a booking to ensure you are able to attend. 

We know that sometimes things happen and if you are unable to make a class and give us plenty of notice, we may be able to fill that spot and in that instance give you a refund or transfer you to a future class. If we don't fill the booking, we won't be able to offer a refund. You can notify us by emailing info@thevri.com.au. Please include your name and the name of the class you have booked into and we will respond to you as soon as possible. 

Refunds can not be given for non attendance on the day.

Terms & Conditions

The VRI will notify participants of cancellation of classes at the earliest convenience via the phone number and email provided. If for any reason we need to cancel a class you will be refunded your payment. 

The office hours for The VRI are Monday to Friday from 9am - 5pm.

Feedback for the VRI - but no need to publish publicly. Tutor well prepared and knowledgeable. Nice facility; easy access and easy parking. Introducing attendees to each other would be nice. Not just assume everyone knows everyone. Things did get confusing at times, due to constant talking by some but there's really nothing you can do about that. Good value for the course fee.
