Fish is fascinating in that its elegance carries with it the mysticism of the underwater world. Large schools of fish swarm weightless through the ocean in beauty and grace and have been a part of our diet for thousands of years.

Historically fish were salted, cured, dried and smoked to preserve and make available for storage and consumption until freezing and chilling was later introduced half way through the last century.

In this session, you learn everything you need to know about freshness, how to choose, store, scale, fillet and prepare fresh fish. The cooking part contains many different recipes but focuses mainly on teaching you the how’s and why’s about cooking fish. Once you know how to poach, slow cook, sous vide, panfry thick and thin fillets, bake, grill, braise, stew and steam fish, you will be able to apply these learned techniques to any fish recipe and succeed in spectacular fashion. Also learn about different crusts and crumbs on fish to make this fish class the single most important class you ever need to attend to learn about cooking fish.

You can learn everything from mastering basic knife skills and learning the secrets of wholefood health, to presentation techniques that will lift everyday mealtimes and dinner parties to a whole new level.


The courses are available in ‘sit-down’ and ‘hands-on’ formats, with intimate classes being the norm. The school, which is equipped with the latest appliances and utensils, can also be booked for private lessons or corporate functions (up to 20 people). Team-building cooking challenges and entertaining cook-up parties are just some of the highly popular events in Walter’s ever-evolving repertoire.

Cancellation & Refund Policy

Anyone partaking in any classes or coming to any events at Trupp-The Chefs Table Cooking School or organised by Trupp-The Chefs Table Cooking School must agree to these terms and conditions.

1.) LIABILITY WAIVER

I agree to take on full responsibility for any damages, injuries and for physical and/or personal property, which I might incur whilst participating in classes and/or events organised by Trupp-The Chefs Table Cooking School.

2.) PHOTO & VIDEO

I agree to give Trupp-The Chefs Table Cooking School unrestricted publishing rights for any photographs or videos taken at Trupp-The Chefs Table Cooking School classes and events or on Trupp-The Chefs Table Cooking School's premises. (For use of Trupp-The Chefs Table Cooking School marketing materials).

3.) REFUNDS

Trupp-The Chefs Table Cooking School requires 48 hours notice in writing prior to the class for a full refund or transfer. 

4.) CANCELLATIONS

In the event that a class is cancelled, students will be notified via text message or email and entitled to a full refund or credit.

Cancellations, Refunds and Transfers

All courses are subject to minimum and maximum numbers of enrolments. If insufficient enrolments are received, the School may need to cancel classes. You will be notified no later the 48 hours prior to the scheduled commencement date, and a full refund will be available to you.

Cancellation: There are limited places in each class and late cancellations usually cannot be on-sold. Bookings cannot be transferred, if we receive less than 2 weeks notice.
