Cellaring, Carbonation, and clarification
(Private Dates Available)
Description
We are offering this consultancy package as the third step in setting up your microbrewery or pub brewery.
You would have brewed your first beer in your new brewery.
You would have monitored it's progress in terms of gravities, pH's, flavour changes and temperatures to ensure you will be able brew good beer consistently.
Now you will decide when to put the brew on Chill back and start removing the yeast.
We will show you how to do this while reducing beer losses.
Clarity of beer is more important than most brewers may think. Getting a consistent level of yeast loading will affect the flavour of your beer and doing it consistently is paramount. Clarity on its own is an aesthetic parameter by which we sometimes subconsciously judge a beer even before we taste it.
Too much yeast in the beer can lead to rejection by customers in keg or small package. Especially when putting a keg of beer on tap can lead to the settled yeast coming up into the first glass with too much cloudiness and unappealing look.
What are the right conditions for carbonation?
Carbonation is another parameter that we need to get right as this can have an effect on mouthfeel and the aroma/taste of the beer.
We can show you how to do natural carbonation and because you selected the right equipment there is the capability to do this.
This will save you thousands of dollars per year if correctly done with the right equipment.
We also determine when and if you filter the beer for further clarification.
Most lagers benefit from filtration to result in a clean, crisp, easy drinking beer.
We will show you how to prepare the beer before filtration, prepare the filter and start filtering without prematurlyblocking the filter.
From fermentation onward we absolutely want to keep dissolved oxygen out of the beer and we show you how to minimise DO pickup.
Weallow up to 3 days for this package.
