In this session you will discover how real butter puff pastry and croissant dough is correctly made. You will  learn how to make the famous dark cacao puff pastry of Joel Robuchon as well as different brioches and choux pastries for different uses. 

While the dough’s are going through their “tours “and proofing stages you will hear about their history and how their commercial counterparts are produced and the highly questionable food additives they contain. See how dough can be frozen and stored for further uses and how their off cuts are recycled so that nothing is lost. The session ends by enjoying these delicate creations in the form of pastries, croissants, puffs, cushions and vol au vent sweet and savoury.

The school, which is equipped with the latest appliances and utensils, can also be booked for private lessons or corporate functions (up to 20 people). Cancellation & Refund Policy

Anyone partaking in any classes or coming to any events at Trupp-The Chefs Table Cooking School or organised by Trupp-The Chefs Table Cooking School must agree to these terms and conditions.

1.) LIABILITY WAIVER

I agree to take on full responsibility for any damages, injuries and for physical and/or personal property, which I might incur whilst participating in classes and/or events organised by Trupp-The Chefs Table Cooking School.

2.) PHOTO & VIDEO

I agree to give Trupp-The Chefs Table Cooking School unrestricted publishing rights for any photographs or videos taken at Trupp-The Chefs Table Cooking School classes and events or on Trupp-The Chefs Table Cooking School's premises. (For use of Trupp-The Chefs Table Cooking School marketing materials).

3.) REFUNDS

Trupp-The Chefs Table Cooking School requires 48 hours notice in writing prior to the class for a full refund or transfer. 

4.) CANCELLATIONS

In the event that a class is cancelled, students will be notified via text message or email and entitled to a full refund or credit.

Cancellations, Refunds and Transfers

All courses are subject to minimum and maximum numbers of enrolments. If insufficient enrolments are received, the School may need to cancel classes. You will be notified no later the 48 hours prior to the scheduled commencement date, and a full refund will be available to you.

Cancellation: There are limited places in each class and late cancellations usually cannot be on-sold. Bookings cannot be transferred, if we receive less than 2 weeks notice.

This was a most enjoyable experience. Many types of pastry were made and tasted on the day. Walter was very generous with his time to ensure that everybody got to understand the process and make a variety of pastry types in a hands on capacity. A good experience.
