We make gelato, it's pretty good.

At Gelato Messina our job is to make people happy. Yes we make amazing gelato with the very best, real ingredients. And yes our gelato cakes are weird and wonderful, but it’s all in the name of putting a smile on someone’s face.

We’re passionate (verging on obsessive) about the creative process. Whether it’s coming up with new flavours or a music playlist for the stores, we throw ourselves into it because that’s what we love.

How would they have made it 100 years ago?

When we make gelato at Messina, we ask ourselves one simple question: “How would they have made it 100 years ago?” The answer is simple – use ingredients in their raw and most natural form and make everything from scratch. ‘Ready made’ ingredients including colourings, flavourings, preservatives and pastes have no place at Messina.

From the meticulous roasting and endless grind of pistachios, to the baking of our own apple pies and brownies, or to the sweet smell of stewed spiced rhubarb, absolutely everything is made lovingly in-house by our little team of mad professors. By using real ingredients, we achieve full bodied texture and flavour in our gelato. Our dairy flavours have low fat content because we use less cream, and our sorbets are completely fat free, dairy free and full of fruit.

28 July 2019 • Gelato Appreciation Class (Sydney)

The gelato appreciation class is just as you’d expect from Messina as a brand. The course host Adrian embodied the professionalism, attention to detail and family-like atmosphere of the team. The variety of the class - factory tour, Q&A, stats, actually making some flavours in front of us, making a cake, and a tasting menu of the recipes, was excellent. It’s appreciation of the entire culture of the company and gelato, rather than a 3 hour free ice-cream fest, but that’s a good thing. And you do get a good variety of things to taste, plus a free small tub to take home.

Thank you Messina for opening your doors to us, what a fascinating class! We had a wonderful time filling up on (a whole lot of) delicious treats. The Messina team gets treated like family and even their cows are happy and looked after which was nice to hear. They are very honest and open to sharing their passion for understanding the chemistry of flavour and bringing that to the product. I feel very happy about supporting a great company with my addiction to gelato!

My sister in law and I came to do this class together on 20/7/19 and we had a great time! To be honest, we just wanted to feast on gelato, but we also learned so much more about the process and company. It was great to be taught of the gelato making process the professional way but also how we can adapt recipes for cooking at home with less professional equipment. The team was extremely lovely and friendly and we have a completely new outlook on the company from the thoroughness of their baking, prepping and creating, as well as their sustainability efforts. You can tell there is a lot of love put into this company in each aspect. It was a lovely surprise to have also received a cookbook to take home! Thanks to the team for a great morning!
