Description
This course is designed to build on the knowledge gained in the Green Coffee Intermediate course.
It provides the student with skills and knowledge that are expected of those fulfilling tasks in managerial roles within the green coffee supply chain.
Note: SCA Green Coffee Intermediate certification is a mandatory prerequisite for this course. SCA Sensory Skills Foundation certification is a recommended prerequisite.
You will learn about key aspects of green coffee, including:
- Botany - How knowledge of coffee genetics is being used to develop cultivars for productivity, resilience, and quality.
- The strategies to overcome the challenges of climate change and its impact on production and quality.
- Farm management and its impact on production, quality, and ecosystems.
- Pests & disease - Impact on production and quality, and preventative measures.
- Processing methodologies - Exploring the variations and critical operations of the steps from harvest to drying.
- Grading - Physical & sensory defects, and assessing attributes of coffees different quality grades.
- Packaging, storage and transport - How coffee is moved from producers to consumers, and the protocols and regulations involved.
- Decaffeination - The importance of where the decaffeination facility is located within the supply chain, and the cost considerations of decaffeinating coffee.
- Certification programs - The benefits and costs of participation.
- Production data - Its benefits for green coffee portfolio management.
- Futures markets - Terminology, how they work, and how they're used.
- Planning and financial management - Strategies for minimising risks of supply and price volatility.
Students who successfully complete the practical exam during the course must then successfully complete an online exam after the course to receive the internationally recognised SCA Green Coffee Professional certification. SCA Green Coffee Professional certification earns credit towards the SCA Coffee Trade Diploma and the SCA Sustainable Coffee Diploma.
