Make Your Own Mozzarella!

Learn how to make authentic fresh mozzarella from one of Australia’s most acclaimed fresh cheese manufacturers.

The class will guide you through the cheese making process starting from the most important ingredient, milk. Our cheesemakers will introduce you to all the methods that are involved in transforming a few litres of milk in cheese!

With hands-on instruction, you’ll learn all the secrets of making Italian style cheese using fresh milk.  

During the class you will learn how to make “primo sale”, the mother of all cheeses, how to hand stretch curd to create mozzarella and how to shape that mozzarella into bocconcini! You will also learn all the secrets to make delicious creamy ricotta!

That’s Amore Cheese will attempt to contact you on your mobile if you are running late on the day. Unfortunately we will not be able to refund your ticket if you come late or fail to attend on the day. A reminder email will be sent out 3 days prior to class date.

Attendees must be 16 years or age or older.

Over one week before the class - $0 fee for date change (per person) and 20% fee for cancellation (per person);

Under than one week before the class - 20% fee for date change (per person) and 100% fee for cancellation (per person).

On the day of the class - 50% fee for date change (per person) and 100% fee for cancellation (per person).

“The key to cheese making is love. That’s true for everything you do, not just cheese. If you do it with love, the results are obvious – it’s got to be good. That’s why my company’s name That’s Amore means That’s Love,” Giorgio says.

He became a cheese maker for the love of creating almost an unlimited number of products from just one ingredient, milk. The ancient art of cheese making involves patience dedication and love.

Our artisanal cheese is handmade following only traditional Italian recipes, using milk sourced locally from Victorian farmers. To produce the best quality Italian style cheese – free from artificial colours or preservatives, it’s essential to use the best quality local milk.

Giorgio Linguanti – Maestro of Mozzarella

In 2004 Giorgio Linguanti arrived on the shores of Port Phillip Bay with a limited English vocabulary. When he first migrated to Melbourne he commenced employment in a cheese factory where his interest and passion for making cheese ignited.

After this experience, in 2008 Giorgio started his own business ‘That’s Amore Cheese’, initially producing just one product – Bocconcini leaf. He would singlehandedly manufacture the product, sell it and then hit the road to deliver it to his customers. The product was an instant success, paving the way for Giorgio to begin making other products.

Giorgio’s business grew rapidly and in April 2015, That’s Amore Cheese moved into a larger facility in Thomastown, also accommodating a beautiful retail outlet.

Thanks to his talent and skills, Giorgio Linguanti (That’s Amore Cheese) has become Australia’s ‘Maestro of Mozzarella’.

Learning the Magic

Cheese making: it’s our passion, and we want to share it with everyone. That’s why at That’s Amore Cheese we have an educational program that includes cheese making classes, live demonstrations and product development.

Our aim is to educate the community on Italian artisan style cheese, showing our traditional techniques and recipes. We demonstrate the tools and techniques you need to be successful through the hand cheese making production process.

At our cheese making classes we help the participant discover just how fun it is to produce delicious, fresh, handmade cheese products at home. You’ll never forget the moment you first taste a slice of cheese you’ve created with your own hands and enjoy sharing it with family and friends.

At That’s Amore Cheese we continue researching and developing new products and experimenting with new flavours, to ensure we continuously offer our customers something different and exciting.

An excellent hands-on introduction to cheese making - the course was a mixture of fun, interest and achievement where we got to take home our own lovely cheeses to eat! The training takes place right in the cheese factory and it is offered by the head cheese maker so it is a fully authentic experience. I couldnt recommend this course more highly if you are curious and you like cheese.

This was a great workshop - very hands on and practical! Helen is very knowledgeable and we learned a lot of subtle techniques in relation to fresh cheese making in the workshop. I would highly recommend this workshop for anyone to do - it's a fun activity and very educational at the same time. Their cheeses are amazing!
