Create your own fresh ganache truffles with Christina Tantsis, owner of Sisko Chocolate in Hawthorn. In this hands-on class you will learn tricks of the trade on how to create smooth, delicious chocolate truffles.
Areas that we will cover are, tempering techniques, emulsion for a smooth ganache, coating and dipping techniques. Allow your creativity to flow and decorate the truffles with various toppings.
Christina is inspired by nature, textures and principles of design. She uses the best quality products she can find ensuring that the product flavours live up to their unique designs.
About Christina Tantsis
Christina’s passion for artisan food arose after living in the Californian wine country for 7 years. A former Floral Designer, she completed a Culinary Art Program and made it her mission to learn as much as she could about the properties of chocolate.
She then worked in a fine chocolate store in Saratoga CA before returning to Melbourne in 2007 where she began Sisko Chocolate. Christina is inspired to challenge the status quo and extend the boundaries of how chocolate could be used creatively and also enjoyed aesthetically.
