SCA Coffee Roasting - Intermediate (2 Days) $1,400
Description
This coffee roasting course will give you a more elaborate understanding of the roasting process and how different kinds of heat transfer are at play. You will also see how different roast profiles lead to different sensory expression for the same coffee, even at the same roast degree. You will learn about roast defects and how to avoid them, and also be introduced to the basic physical changes that the beans undergo during the roasting process. Finally, there is a small appendix about workspace management and lean production.

- How to adjust charge temperature and flame control to avoid scorching and under development
- Pyrolisis, Maillard reaction, and strecker degradation and their importance in roasting
- Basics of controlling development time
- Cooling coffee management
- Volume, weight, and colour change
- Sugar and acidity change
- Roaster construction (e.g. drum, fluid bed, continuous flow)
- Roaster ventilation
- Workspace management
- Additional tools for roasting
- Cleaning maintenance and troubleshooting
Students who successfully complete the practical exam during the course must then successfully complete an online exam after the course to receive the internationally recognised SCA Roasting Intermediate certification. SCA Roasting Intermediate certification earns credit towards the SCA Roastery Diploma.
This is a 2 day course.
Each day starts at 9am and is scheduled to finish by 6pm. However, the course may finish earlier if students complete the tasks sooner than expected.

Pre-requisites: It is recommended that you complete SCA Introduction to Coffee and have some experience of working in this field before attempting this level, or have successfully passed SCA Roasting Foundation.

If you can't attend the class:
You’re welcome to send someone in your place.

- A refund can be requested 14 days before class starts. An admin fee of AU$20.00 applies.
- A transfer can be requested anytime before the class starts. Free of charge.
No changes will be allowed after these times.
