In this course we will prepare a Christmassy feast of smoked, brined juicy leg ham, poached Cotechino sausage and an Italian steak tartare! These beautiful cooking techniques will be a welcome addition to your christmas table for all the family to enjoy.Instead of ordering your christmas ham, make your own! We will be smoking, mincing, filling natural sausage casings and hand chopping tender eye fillet! There is so much to learn and this class is not to missed. It is perfect for anyone that loves to cook for friends and family. You will have a full set of recipies from the day and access to our tutor for advice while making these dishes at home for your self! After all the hard work, we will sit and enjoy all the beautiful food we have created with sides and wine to help... yum!!

Katie Krauss, a chef with over 15 years of experience in some of Melbourne’s top restaurant kitchens, heads up our Christmas Feast Class, offering a hands-on, intensive and practical approach to this festive cooking course.
