Description

Katie Krauss is an expert charcutirer and salami maker. She has had years of experience teaching Melbourne’s beginners in the art of salami making, fermentation, curing and sausage making. Katie is a professional chef and teacher, making this learning experience particularly valuable. 

This is a hands on master class that will run for aprox 3.5 hours, where we will chop, mince, flavor and fill our own salamis while Katie discusses the philosophy of salami and how to have guaranteed success at home. All this in the picturesque setting of the tranquil Bellarine Estate by the outdoor  fire!

Peter and Lizette Kenny established Bellarine Estate in 1996 with the goal of producing premium Cool Climate wines on the Bellarine Peninsula.

The 100-acre property occupies the northern slopes of the hills between Drysdale and Portarlington overlooking Corio Bay. The vineyard is nestled in a valley that is sheltered from harsh winds, yet perfectly positioned to capture the sun’s rays. This true maritime climate provides warm days and cool nights which ensure a long, slow ripening season and fruit of exceptional quality. The area’s rich black basalt soils overlying a limestone base further accentuate the fruit flavours.

Bellarine Estate is planted to Savignon Blanc, Chardonnay, Viognier, Pinot Noir, Shiraz and Merlot. We carefully tend and hand pick the fruit while allowing it to fully ripen, ensuring that the flavours and tannins reach maturity at the same time as the sugar reaches its required level.

We produce two labels. The Bellarine Estate label is one hundred per cent estate-grown fruit. The Portarlington Ridge label includes fruit from other growers in the region.

Since the first Vintage in 1999 our wines have continued to win high acclaim in Australia and overseas.

Realising there was also a niche market for beer on the Bellarine Peninsula, Two Wives Brewery was created. Established in 2007, the “Beer by the Bay” brewery produces exceptional quality ginger beer, ales and stouts. The beers are distinctly different, full of character and flavour as only quality microbrewed beer can deliver. This is beer with attitude, perfect for the first time beer drinker and loved by the mature palate of a seasoned connoisseur.

We have ample off-road parking and we are only 20 minutes by car from Geelong. The seaside resorts of Portarlington, Queenscliff, Ocean Grove and Barwon Heads are also close by.

Our friendly Bellarine Estate staff will be more than happy to discuss our wine and beer styles in our Cellar Door when you next visit the picturesque Bellarine Peninsula.

My wonderful friend and I had a great day learning the processes of salami making at Bellaraine Estate. Katie gave us lots of opportunities to have a go at all of the stages of making salami through to the curing stage with lots of expert tips and tricks provided along the way. We had lots of laughs meeting a great group of people an intimate class size. Katie cooked us a delicious leisurely lunch to go with the Bellarine estate wines that we sipped on through the class making a very relaxing day!

This Salami class was definitely worth going to. As the French would say “Je Ne sais quoi” or “what I do not know”, comes to mind. After being taken through the step by step process you realise how much effort goes into making a true “homemade “ salami and how each step requires careful attention to get it right. This was a hands on experience which added to the day. Having said that it was also a fun time had by all with a great lunch, salami and wine tasting adding to the experience. An overall good day.
