For all home canners, some understanding of what canning (bottling & preserving) is and why it works will be most helpful.  Canning (Bottling & Preserving) is a reliable method of preserving food, and the basics of canning are easy to learn.

Are you interested in the art of preserving food – bottling, drying, pickling and storing surplus produce from the garden and having “food for all seasons”.  The fridge dependency has meant many have lost the skills of preserving and storing food to enable us to use today’s surplus against tomorrow’s shortages and ensure you have food throughout all the seasons. 

Plants, like all living things, grow, die and decay.  As soon as you pull up a carrot or pick an apple, the process of decay begins.  For this reason, all fruit and vegetables are best eaten fresh, but this is often not practical, especially when you have a glut of produce, ripe and ready for harvest at the same time.

There are few things more rewarding for the home gardener than to assemble a meal of home grown produce.  This harvest can be enjoyed year around by preserving, be it via bottling, drying, salting, fermenting, pressure canning or freezing.

The beauty of this is that not only can the season’s surplus be preserved for other times of the year, but also a variety of flavours and textures can be enjoyed as a result of the preserving process.

As people have concerns over the additives to foods and the increase in allergic reactions to particular types of chemicals.  If you preserve it yourself, you know exactly what has gone into the food.

The day includes pre course coffee & tea and morning tea, along with homemade preserve tastings, but most importantly, knowledge and skills required for home Preserving!  Please advise of any dietary requirements.

Please note: If you are interested in attending one of these, please make a booking ASAP as spaces are limited. Please note if minimum numbers are not met, the workshops may be rescheduled.

Homestead Hill, our property, is a Farm stay/Bed and Breakfast. If you would like to attend a workshop and stay overnight, or for the weekend, we will offer a package deal.

Homestead Hill is a Bed and Breakfast/Farmstay practicing in sustainable living.  Our passion for sustainable living was a motivating force that created Homestead Enterprises. We are a small country farmstead and we raise our own meat, produce and eggs. We take great joy in sharing amazing experiences with people from across the globe who attend our educational and fun workshops in Cheese Making, Home Preserves, Sausage and Salami Making along with Wood Fired Smoking. 

Pat and Linda both grew up on farms that were self-sustaining (back then we called it survival).  Pat in North America and Linda in Australia.  Linda learned wonderful skill sets from her Grandmother and Mother (both born in Italy) and gained further knowledge from Pat’s Grandmother and other pioneers while living in North America.  Pat has been Smoking and BBQ for 40 years.  He is very passionate about it and loves to experiment.  Therefore, our classes have both a European and North American Influence.

Homestead Hill is close enough to Melbourne to have all the modern conveniences but still be far away enough to escape the city hustle and bustle.  Homestead Hill is located in the Macedon Ranges that is well known as a picturesque region of fertile river valleys, rolling hills and tree-clad ranges.  We are a 15 minute drive from Hanging Rock an icon of the Ranges and an internationally recognized attraction.   Other points of interest include walking trails, mountain biking and road cycling, as well as some excellent wineries in the region. Homestead Hill offers as much or as little as you may want to do for a relaxing getaway.

Class Booking Conditions

Bookings are considered final once payment is made, no refunds will be given for non attendances. However, if at least 7 days notice is given of inability to attend, a transfer to an available class of may be organised.

Class Cancellations

If there are insufficient numbers for a class it may be cancelled or postponed. In this case, you will be notified as soon as possible and given the option of a full refund or a transfer to a class of equivalent value.
