Olives straight from a tree are inedibly bitter and must be cured and then pickled somehow to make them edible. In this workshop we will cover several different techniques to cure olives, each with a different waiting - or curing - period. In order to fully experience the stages of the processes, some olives will have been partially cured before the class for you to continue the process; as well as taking home fresh olives for you to start from scratch. Tastings will be available so you can decide which style is your preferred. We will use both black and green olives. If you grow olives, bring along some samples so that we can suggest some ways to cure them.
My Green Garden is very pleased to collaborate with Massaros Winery in the Yarra Valley (Kangaroo Ground) in bringing you this workshop. It will be hosted at the winery in their outdoor (heated) room. We will pick olives from the trees in their extensive olive grove before settling in to do the curing techniques, so please ensure that you are wearing appropriate clothing and footwear for the season.
We will start promptly at 9.30am and the workshop should be finished by 12noon. You are invited to linger a while at the lovely winery's restaurant and enjoy a relaxing lunch (at your own cost).
BOOKING CONDITIONS Bookings are considered final once payment is made. If you need to cancel, at least 7 days notice is required in order for a refund, less a 10% administration fee. For any cancellations made within 7 days of the workshop date, you will forfeit your fee unless the place can be filled from a waiting list (you willl be refunded less the 10% admin fee). If you would like to transfer to another workshop, it must be done with at least 7 days notice before the start of the workshop.
I learned how to cure/brine olives, as well as some background as to the techniques used and the chemistry behind the processing of olives. The highlight was being taken through the different stages of curing olives as the group could see and taste olives at different stages of the curing process; this brought it all to life. I highly recommend this class for anybody curious about what to do with olives. The format is easy to understand but thorough, friendly and enjoyable. Have already used the techniques learned at home which shows how easy it was to learn the techniques.
In this class we learned to prepare & preserve olives in several different ways. It was very enjoyable, very relaxed & very informative !! Thanks to Maria for opening up her home & sharing her wealth of knowledge. Small class sizes & lots of goodies to take home.
This class is just as described. Very informative and I learnt many different ways of preserving olives,Maria was very generous in giving us a bottle of olives from each preserving method taught . Tastings as well as ready to eat deli out olives dressed in olive oil,oregano ,garlic and chilli to take home. I would definitely recommend this class to others, Yummy morning tea provided.
