You will learn about scaling, filleting flat and round fish, storing, and freezing/ defrosting and all the essentials about fish knives and fish cooking utensils. All the fish cooking basics like braising, panfrying, stewing, baking, steaming, poaching, roasting (fillets and whole fish), wrapping and confit.

Recipes will include some of the following; Entrée salads, raw cured fish like Gravlax, Cured Snapper with Exotic Spices , Fish Tartars and Carpaccio’s and Tea and Smoked Fish, Exotic Tandoori Flounder with Apricot and Tomato Chutney, Poached Fish Quenelles in Champagne Gratin, Bouillabaisse, Dory Poached in Lime Coconut Sauce, Barramundi and Ricotta Goujons wrapped in Speck on Balsamic Lentils etc.

You will also make a wide range of different fish crusts such as soft herbs, smoked salmon and wasabi, gruyere cheese and thyme, almond, sesame and pistachio crust etc.

Cancellations, Refunds and Transfers

All courses are subject to minimum and maximum numbers of enrolments. If insufficient enrolments are received, the School may need to cancel classes. You will be notified no later the 48 hours prior to the scheduled commencement date, and a full refund will be available to you.

Cancellation: There are limited places in each class and late cancellations usually cannot be on-sold. Bookings cannot be transferred, if we receive less than 2 weeks notice.
